Why doesn't Ubuntu do what Debian does and release a "netist" disk - the Debian one is only 150MB or so. Everything else is pulled off the 'net as required, rather then download everything under the Sun, requiring GB of downloads, a DVD burner and more time... Then they could have one 'base' release with the various flavours 'Studio', etc. as package suggestions to be loaded after you've got the basics...
http://www.ubuntu.com/products/whatisubuntu/serveredition/jeosThat's probably the closest you're going to get to that, although remember that you can use a standard ubuntu install and just run apt-get install ubuntu-studio if you want to install the US stuff.
