I can't speak for individuals, or small companies, but training locally is sparse on the ground from the big suppliers.
Exeter University were offering GNU/Linux training. Beyond that I think there are companies in Bristol with extensive experience.
I would agree with John, outsource it to an extent, take some of that money saved by switching and splash it on a company to provide some support. You don't have to switch to Redhat to do this, which is where I diverge from John.
When you are talking about 200 servers, you need some pretty good general IT management skills independent of the technology, but you may have that already.
