Your only option here is a symlink, as hard links can't be made across
partitions.
Also if you have an existing /opt partition, just umount it, set it so
it's not mounted at boot time in /etc/fstab and thenput stuff into /opt
(on the root fs). Or nuke it and symlink it. Whatever!
