I have a Logitech C310 which just works, and has ever since I started using Linux years ago. IMHO provided it's full HD and works natively in Linux, nobody will ever see it so the image will look the same whatever you spend.

Have you considered the Pi camera on a Pi? Its
capable of 3280 x 2464 pixel static images, and also supports
1080p30, 720p60 and640x480p90 video. Not sure what purpose you want it
for but you can get POE for it and for around £100 you can get
a reasonable camera, tolerable video and the option of AI
object recognition done at the camera? IR option available
too! I keep wondering about one with PV for the chicken house
to guillotine any undesirable visitors!
