I updated a couple of Dell desktops from Jessie and Wheezy (via Jessie) respectively to Stretch and it all Just Worked. Good.
i7 hmm.
The old one is an i5 and chugs a bit when Gimp 2.9 is doing high precision. So more CPU oomph seems reasonably useful.
Graphics: Nvidia or something else for a 4 monitor setup?
Looking back the latest death occurred before the BIOS was told to be less optimistic.

If you've put the BIOS back to defaults, is it not now in the wrong
"mode" to boot the EFI system? I'm obviously not sure quite how your
motherboard handles switching between BIOS and UEFI mode but it sounds
like it could well be failing to boot for that reason.
The crashes and errors copying files you mention could also be
symptomatic of the boot drive failing - have you checked the SMART
status of your drive(s)?
