HI, A stock debian 6 (Long term support version) distro should fit your needs https://www.debian.org/releases/squeeze/ ...., when installing use the installer to create a software volume (LVM) with the 2nd and 3rd disks and use the 1st for the OS and everything else (dont segment, just use the full volumn). use ext3 for the first drive and ext4 for LVM volumn. Then just set up a simple CIFS (samba) file share. There are lots of details online to set this up : see http://www.tldp.org http://debian-handbook.info // while this refers to Debian 7 99% will be the same for 6 where samba is concerned. also Debian is "standard issue" and a good grounding in using linux for something serious. Ps. when installing, chose core, ssh and file server, ignore desktop you'r wasting resources installing anything else, use ssh (putty = ssh client for windows) i Only at the shell you can selective install packages with apt-get // ie a minimal X environment and window managed (i.e. wmaker) if you really want a very light desktop.
