Pretty much all of the major linux distributions support proper EFI booting through the full chain from grub on up. If you're going to go fully native, just beware of the fact that your boot disk will need to be GPT not MSDOS format and your installer will also create a couple of extra (very small) partitions at the start of the disk for compatibility reasons. If you're a fan of fdisk (and who isn't!), it will barf slightly but print a friendly warning because it doesn't like GPT disks: ghost@failbot:~$ sudo fdisk -l | grep GPT WARNING: GPT (GUID Partition Table) detected on '/dev/sdc'! The util fdisk doesn't support GPT. Use GNU Parted. But really, don't fear the UEFI - it's a much, much needed replacement for the crappy BIOS and pretty much any new computer you buy is going to have it.
