On my GNOME setup I have 4 panels (*gasp*) - top, bottom, left & .right. All except the top are autohidden, but I did change the hidden size (in gconf-editor) to 1px so they are less intrusive.

In terms of the standard gnome bars. In the preferences you can choose
"show hide buttons" which I like. This lets you hide either of the
panels. You can also "auto-hide" which personally i dont like. :-)
