You say you don't get the background? Do you get any window controls? (Maximise, minimise etc)?If not then it sounds like the Window manager might not be running. I which case if you have a terminal open, try running metacity or metacity --replace
Remember, you can also boot from a live CD and get into the /home directory. If you press Control H in a Nautilus window it will show the hidden folders. I believe the Evolution data would most probably be in .evolution
These hidden folders, or in fact the whole home directory can be transferred from one machine to another, or one user to another (you'd just have to make sure if you're changing from user to user the owner is reset to the new user).
