Sounds good, I've not extensively looked at Peppermint but what I did check out of it in VirtualBox it seemed to be better put together than the official LXDE version of Mint :-)
I recently setup two laptops running Xubuntu, they were P3 laptops around 700Mhz, they were slow but worked reasonably well for basic web browsing etc.
