Disclaimer: Havent used V3 havent used thunderbird for a while now tbh.
But i do remember from when I had multiple email accounts in
thunderbird 2 that in the accounts setting you can set a per account
SMTP settings per account.
I would check that these were set in 3 and ticked to override the default.
