There are many behind-the-scenes differences (the integration of upstart, a new glibc) but probably not much a typical user would notice. There's a slightly newer KDE and a few newer packages, but that's all. They seem to have made OpenOffice and Firefox especially crashy, so you may be better off sticking with Dapper (6.06).
