"Multisession" just means that you can write some data to the disc, stop, take it out, do what you like with it and then come back later and write some more (if you want). Pretty much every CD burning software I've used supports that, and every CD/DVD burner I've seen works fine under Linux. As for software, I recommend K3b - it's powerful, easy to use, pretty, and it plays a silly tune when it's finished burning.
