Once it's all up and running I would be inclined to make a Ghost image 
of their system and burn it to a CD (or DVD depending on size).  Then 
tell them to keep it *safe* so that if they break it again you can get 
back to basics.  Preferably tell them how to ghost it themselves and do 
a proper image every month.
