On the upside it will just work as installed. You'll just surf the UW site for instructions everytime you want to change something.

Agreed, I have recommended dovecot to another DCGLUG member previously, but with the proviso that it is fairly immature, so whilst you are unlikely to hit a basic functionality bug in UWIMAP, it is possible you might hit the same in dovecot, particularly if you use obscure or broken IMAP4 clients.
Also use maildir with dovecot, it is arguably a better format, but the mbox implementation is a bit iffy in the older dovecots.
One thing to sort is decent server side mail filtering (DCGLUG email into DCGLUG folder, kind of filtering as much as UBE). Thing with being able to access your email from anywhere is you want to filter it at the place you are getting it from rather than the client.
I think courier practically invented Sieve (language for server side mail filtering), and there are some systems that allow you to enter these rules in a sensible fashion. ssh and procmail (or other command line type filtering tool) are probably find for just yourself.
The lateral approach if the places you check your email have enough bandwidth is to ssh in with "-X" and send the GUI for your email client back to the local box. Doesn't work over ISDN terribly well with Thunderbird :(, but can pick up all your other email settings at the same time.
