It is a bitch to setup under debian, or does someone have some quick solutions? Adding iptables rules by hand sounds like a nightmare.

Well, if you configure your firewall properly you need not worry too much about services you do not use.
2. Keep upto date with the patches!
Yeah that is a good idea. dselect update and apt-get dist-upgrade as often as you bothered. But come on, be serious folks. No cracker will be interested in a dial up system. It would take too long to check it if you have anything worth looking at. For a machine you keep on all the time on DSL, well thats a different story.
